The seminar lasts for 5 days and it is addressed to barista and consumers starting from scratch. It includes coffee route from the bean to the last stage which is preparation (botanology, plantation, Arabica and Robusta coffee varieties, harvest, processing, storage, roasting, the coffee economy and world coffee consumption). Then, students can have a first contact with the basic principles and steps of espresso and cappuccino preparation, starting from their contact with the coffee machine and the grinder. Moreover, the student can have a first contact with brewing (filter coffee, hand brew) and the basic brewing steps. Apart from the theoretical part, the last 3 days you will focus on practice and getting familiar with the use of the machine and the grinder. Students can also learn about latte art and try to experiment with some basic shapes. The program lasts 42 hours, 5 working days. During the first three days the program included 8hours per day while during the last 2 days it includes 9 hours per day.

Espresso - Cappuccino Basic
The seminar lasts for 3 days (12 hours in total, 4 hours per day) and it is addressed to baristi with limited professional experience and to home baristi familiar with coffee preparation at home. It includes the following educational sections:
-The role of the barista
-Grinder
-Espresso machine
-Tamping
-Problems & solutions
-Espresso: preparation steps
-Espresso menu
-Cappuccino
-Barista tips
This seminar also includes practice regarding the preparation of espresso and cappuccino beverages. This section prepares participants for the practical examination of the SCAE Barista Foundation Skills Certification. Finally, this specific seminar includes basic latte art skills meaning knowledge regarding milk composition, basic latte art techniques and shapes (heart, tulip, rosetta) as well as practice.
Hand Brew Basic
This seminar is completed in one day and lasts 4 hours. It is addressed to barista and home baristi. It includes theory regarding coffee brewing based on SCAE Gold Cup, practice based on the Gold Cup standards and brewing methods (chemex, V60 etc).

Espresso Advanced
The Espresso Advanced seminar lasts for 6 hours and requires that you have attended the Espresso Cappuccino Basic Seminar. It includes grinding, dosage, sensory analysis and evaluation. It also includes practice regarding the preparation of espresso and cappuccino beverages. This section prepares participants for the practical examination of the SCAE Barista Foundation Skills Certification.

The essence of origin
Τhe seminar “the essence of origin” is completed in one day and lasts 4 hours. It includes the analysis of the different coffee growing areas, the several climate conditions, soil and microclimate. It also includes coffee tasting for the participants’ skills development.

SCAE Barista Skills Foundation
Taf gives you the possibility to acquire the SCAE Barista Skills Foundation, participating at the seminars that take place on a regular basis with Yiannis Taloumis and Stefanos Domatiotis as authorized trainers. This certification is from the Specialty Coffee Association of Europe and is recommended for baristas and people in the coffee sector. Candidates who successfully pass the certification will receive the SCAE "Barista Skills Foundation” diploma. This diploma is designed to introduce core barista skills to baristas with no previous experience. The certification includes a written test as well as practical test. These tests are given in English but there is a possibility to translate the test for those that are not so familiar with the English language. The written test includes basic knowledge regarding coffee. Candidates should know some basic facts regarding botany, appropriate use of the machine as well as the coffee grinder and basic hygienic rules regarding the machine and the coffee grinder. They should also have basic knowledge regarding dosing, tamping, espresso preparation as well as milk based beverages preparation.
SCAE Certification Barista Intermediate
Taf gives you the possibility to acquire the SCAE Barista Level 2 Certification, participating at the seminars that take place on a regular basis with Yiannis Taloumis as an authorized trainer. This certification is from the Specialty Coffee Association of Europe and is recommended for professional baristas working for six months or more. Candidates who successfully pass the certification will receive the SCAE "Barista Skills Foundation” diploma. This diploma is designed to introduce core barista skills to baristas with no previous experience. The certification includes a presentation, a written as well as practical test. These tests are given in English but there is a possibility to translate the test for those that are not so familiar with the English language. Designed to test key core and more advanced skills and understanding expected from a competent barista with working experience of 6 months or more. Candidates should be able to prepare a full range of drinks with quality and speed as well as understand the basic requirements of customer service.
